Jalebi and imarti
Jalebi are spirals of batter fried crisp and dropped into warm sugar syrup. Eat them hot, while the outside still crackles and the syrup runs. Imarti is a close cousin, made from urad dal, with a flower-shaped swirl and a softer bite.
Chaat
Chaat is the family of tangy, sweet and spicy snacks: crisp aloo tikki topped with chickpeas, yoghurt and chutneys, or papdi with the same. Pani puri, hollow shells filled with spiced water, is the one to eat standing up.
Samosa, kachori and chole bhature
Aloo samosa and dal kachori come straight from the fryer. Chole bhature, a spicy chickpea curry with puffed fried bread, is a full meal on its own.
