Whole green chillies, split, stuffed with the masala (mustard seed, fennel, fenugreek, nigella, cumin and turmeric) and left in rapeseed oil until they soften and the oil turns gold. 60% chilli. This is the hot one.

It is not a sharp, raw heat. The cure takes the edge off the chilli and leaves a slow, building warmth, with the sour of the acidifier behind it and fennel on the finish. Half a chilli on the side of a plate is enough for most people. A whole one is for the person who orders the dal and asks for extra green chilli anyway. Handmade in small batches in Arndell Park.

What is in it: chilli 60%, rapeseed oil 20%, salt, acidifier, red chilli, fenugreek, fennel, cumin seed, mustard seed, turmeric, nigella. 100% pure. 300g glass jar, 15 serves.

Best before 90 days from the packing date stamped on the label. Keep it cool, dry and out of the sun.

How to eat it
  • With paratha: a piece on the side and a little of the oil spread across the top. The classic breakfast.
  • Dal chawal and khichdi: one piece per plate is plenty. Mash a little into the rice.
  • Curd rice, thepla and roti rolls: a smear of the masala and oil does the work of a chutney.
  • Cheese and crackers: a teaspoon of the masala alongside a sharp cheddar is not traditional and is very good.
  • The oil: it is flavoured by everything in the jar. Spoon it over plain rice or into a dal tadka.

Use a clean, dry spoon every time and push the pieces back under the oil before the lid goes on.

  • Best before 90 days from the packing date printed on the label.
  • Cool, dry place away from sunlight. Once opened, the fridge keeps the colour and crunch longest.
  • Dry spoon only. A drop of water spoils a pickle long before time does.
  • Keep the pieces under the oil. If the top looks dry, tip the jar once and let the oil settle back over.

PACKAGING: A 300g glass jar with a gold metal lid, packed upright and wrapped for transit. A little oil on the inside of the lid is normal for a fresh pickle.

DELIVERY: Express courier anywhere in Australia: $25 for orders up to 4 kg, $50 up to 10 kg. You choose pickup or delivery and your date in the bag, and the full total is shown before you pay. Delivery is charged once per order, so a jar added to a sweet order travels in the same parcel.
