Mango Pickle – Aam ka Achar
Green mango cut thick and left to take the spice the slow way, in rapeseed oil with mustard seed, fennel, fenugreek, nigella and red chilli. This is the achar that sits beside the paratha at our counter, in a jar.
First you get the sour of raw mango, then the warm, faintly bitter edge of fenugreek, with whole fennel and mustard seed crunching under the teeth. One piece is enough for a plate of dal chawal. A little of the oil on a hot paratha is most of a breakfast. Handmade in small batches in Arndell Park, 60% mango, and you can count the pieces through the glass.
What is in it: mango 60%, rapeseed oil 20%, salt, acidifier, red chilli, fenugreek, fennel, cumin seed, mustard seed, turmeric, nigella. 100% pure. 300g glass jar, 15 serves.
Best before 90 days from the packing date stamped on the label. Keep it cool, dry and out of the sun.

- With paratha: a piece on the side and a little of the oil spread across the top. The classic breakfast.
- Dal chawal and khichdi: one piece per plate is plenty. Mash a little into the rice.
- Curd rice, thepla and roti rolls: a smear of the masala and oil does the work of a chutney.
- Cheese and crackers: a teaspoon of the masala alongside a sharp cheddar is not traditional and is very good.
- The oil: it is flavoured by everything in the jar. Spoon it over plain rice or into a dal tadka.
Use a clean, dry spoon every time and push the pieces back under the oil before the lid goes on.
- Best before 90 days from the packing date printed on the label.
- Cool, dry place away from sunlight. Once opened, the fridge keeps the colour and crunch longest.
- Dry spoon only. A drop of water spoils a pickle long before time does.
- Keep the pieces under the oil. If the top looks dry, tip the jar once and let the oil settle back over.

PACKAGING: A 300g glass jar with a gold metal lid, packed upright and wrapped for transit. A little oil on the inside of the lid is normal for a fresh pickle.
