Three pickles in one jar: green mango for the sour, green chilli for the heat and carrot for a sweet crunch, all cut thick and cured together in the same mustard, fennel, fenugreek and nigella masala in rapeseed oil.

Every spoon comes out different. A sharp piece of mango one time, a soft chilli that has given most of its heat to the oil the next, then a batten of carrot that still snaps. It is the jar for a table where one person wants sour, another wants hot and nobody can agree. Equal parts mango, chilli and carrot, handmade in small batches in Arndell Park.

What is in it: mango 20%, chilli 20%, carrot 20%, rapeseed oil 20%, salt, acidifier, red chilli, fenugreek, fennel, cumin seed, mustard seed, turmeric, nigella. 100% pure. 300g glass jar, 15 serves.

Best before 90 days from the packing date stamped on the label. Keep it cool, dry and out of the sun.

Add a jar to a sweet order and it travels in the same parcel. Bring India home: it is the jar that gets passed down the table twice before the dal does.

How to eat it
  • With paratha: a piece on the side and a little of the oil spread across the top. The classic breakfast.
  • Dal chawal and khichdi: one piece per plate is plenty. Mash a little into the rice.
  • Curd rice, thepla and roti rolls: a smear of the masala and oil does the work of a chutney.
  • Cheese and crackers: a teaspoon of the masala alongside a sharp cheddar is not traditional and is very good.
  • The oil: it is flavoured by everything in the jar. Spoon it over plain rice or into a dal tadka.

Use a clean, dry spoon every time and push the pieces back under the oil before the lid goes on.

  • Best before 90 days from the packing date printed on the label.
  • Cool, dry place away from sunlight. Once opened, the fridge keeps the colour and crunch longest.
  • Dry spoon only. A drop of water spoils a pickle long before time does.
  • Keep the pieces under the oil. If the top looks dry, tip the jar once and let the oil settle back over.
